Buffalo Wings With Ranch Dressing
Buffalo wings are an American classic. Generally deep-fried and then coated or dipped in a sauce consisting of a vinegar-based cayenne pepper hot sauce and served with a ranch dressing.

Method
Pat the chicken wings dry with paper towels. Cut the tips off each wing and discard. Bend each wing back to snap the joint, and cut through to create two pieces. Combine the pepper, garlic salt and onion powder. Rub into each chicken piece.
Heat the oil to moderately hot in a deep heavy-based frying pan. Cook the chicken in batches for 2 minutes. Remove and drain on paper towels.
Transfer the chicken to a non-metallic bowl or shallow dish. Combine the sauces, butter, sugar and Tabasco. Pour the mixture over the chicken and stir to coat. Refrigerate, covered, for several hours or overnight.
To make the ranch dressing, combine the mayonnaise, sour cream, lemon juice, chives, salt and white pepper in a bowl and mix well. 5 Preheat a barbecue grill or flat plate to high. Lightly oil the hot barbecue. Cook the chicken for 5 minutes, turning and brushing with the marinade. Serve with the dressing.

125 g (4½ oz/½ cup) sour cream
2 tablespoons lemon juice
2 tablespoons snipped chives
