Beef Burrito

The Mexican dish is popular all over the world, but it has only been offered in American restaurants since the 1930s and now a worldwide wining dish.

Ingredients

  • 600 g minced beef

  • 2 tablespoons oil

  • 1 medium onion, sliced

  • 1 tablespoon ground cumin

  • 2 teaspoons ground coriander

  • 1/2 teaspoon ground cinnamon

  • 1 teaspoon chilli powder

  • 425 g can tomatoes, chopped

  • 1/3 cup tomato paste

  • 440 g can kidney beans, drained

  • 270 g can corn kernels

  • 1 packet flour tortillas


Method

1. Heat oil in a large heavy-based pan; add onion, spices and mince. Cook over medium-high heat for 10 minutes until well browned and almost all the liquid has evaporated. Use a fork to break up any lumps of mince as it cooks. Reduce heat to low, add tomatoes and paste. Cover and cook, stirring occasionally, for 20 minutes. Add kidney beans and corn and stir until heated through.

2. Preheat oven to 180°C. To assemble burritos, place about half a cup of the mince mixture on each tortilla. Roll tortillas around filling and place seam-side down on baking tray. (Allow two burritos per person.) Sprinkle burritos with grated cheese and bake for 10 minutes or until the cheese has melted. Top each burrito with a tablespoon of taco sauce, if liked, and serve immediately, with a green salad.
